Saman:

  • 2 cup wheat flour (atta)
  • 1 cup finely chopped cauliflower (gobhi)

  • 1 tablespoon oil
  • 1 teaspoon carom seeds (ajwain)

  • 1 teaspoon salt
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon dried mango powder (amchur)
  • Oil for frying

Tarike:

  • Sabse pehle, dough taiyar karna shuru karein. Ek bade mixing bowl mein wheat flour, salt, carom seeds aur oil ko mix karein.
  • Dhire-dhire flour mixture mein pani daal kar ek soft aur smooth dough taiyar karein. Usko ek dampe kapde se cover karke 20-30 minute ke liye side par rakh dein.

  • Jab tak dough rest kar raha hai, parathe ke stuffing ke liye tayyar ho jayein. Ek pan ko garam karein aur usmein thoda sa oil daal dein. Jab oil garam ho jaye, usmein chopped cauliflower ko add karein aur kuch minute ke liye saute karein.
  • Cauliflower mein red chili powder, coriander powder, cumin powder, garam masala aur dried mango powder ko add karein. Sabhi ko achche se mix karein aur cauliflower ko bilkul tender hone tak pakayein.
  • Jab stuffing pak jaye, use thanda hone ke liye rakh dein.
  • Dough ko small, equal-sized balls mein divide karein. Har ball ko ek chota circle mein roll karein.
  • Circle ke center mein cauliflower stuffing ka ek spoonful daal dein. Circle ke edges ko ek saath jod kar stuffing ko cover karein.
  • Ab stuffed dough ball ko gently apni palm se flatten karein aur use thoda sa flour se dust karein.
  • Roll pin ka use karke dough ko circle shape mein roll karein, dhyan rakhein ki stuffing bahar na nikle.
  • Ek tawa ya griddle ko medium heat par garam karein. Garam hote hi rolled-out paratha ko tawa par rakh dein aur dono sides ko golden brown hone tak cook karein. Parathe ke surface par thoda sa oil add karke crispy hone tak cook karein.
  • Dough balls aur cauliflower stuffing ke saare parathe taiyar hone tak isi tarike se repeat karein.
  • Garm-garm gobhi ke parathe ko dahi, pickle ya chutney ke saath serve karein aur apne delicious North Indian breakfast ka maza lein.
