1 cup paani

3-4 tablespoon besan (gram flour)

1 teaspoon haldi powder

1 teaspoon lal mirch powder

1 teaspoon jeera

1 teaspoon rai

Thoda sa hing (asafoetida)

1-2 hari mirch, kaati hui

Kuchh curry patta

Namak swad anusar

2 tablespoon tel

Tempering ke liye:

1 tablespoon ghee

1 teaspoon jeera

Thoda sa hing (asafoetida)

Kuchh curry patta

2-3 sukhi lal mirch

Vidhi:

Ek mixing bowl mein dahi, paani, besan, haldi powder, lal mirch powder aur namak ko achchhi tarah se mila lein.

Ek deep-bottomed pan mein tel ko medium aanch par garam karein. Jab tel garam ho jaye, usmein jeera, rai, hing, hari mirch aur curry patta daal dein. Kuchh seconds tak fry karein jab tak khushboo na aaye.

Pan mein dahi ka mixture daal dein aur lagatar hilate rahein ki lumps na banein. Jab mixture ubalne lage, tab aanch kam kar dein.

Kadhi ko 15-20 minutes tak low flame par pakne dein aur beech-beech mein hilate rahein. Jab kadhi thick ho jaye aur besan pak jaye, tab gas band kar dein.

Kadhi ko gas se hatakar thoda sa thanda hone dein.

Ek chhote pan mein ghee ko medium aanch par garam karein. Usmein jeera, hing, curry patta aur sukhi lal mirch daal kar kuchh seconds tak fry karein.

Temper kadi mein daal dein aur achchhi tarah se milayein.

Kadhi ko chawal ya chapatis ke saath garam garam serve karein.

Tips aur tricks:

Lumps na banein, iske liye dahi ka mixture achchhi tarah se mila lein.

Kadhi ki consistency paani ke hisaab se adjust kar sakte hain.

Kadhi mein bhindi, aloo ya pyaaz jaise sabziyan bhi daal sakte hain.

Kadhi ko aur creamy banane ke liye, aap mixture mein ek tablespoon cream ya malai bhi daal sakte hain.
